Japanese style wild game dinner course using venison and wild boar hunted in Miyama. Supervised by the top chef of the long-established Kyoto cuisine restaurant Minokichi, and with KAJIKASO’s long time experience of serving venison and wild boar meat, we are proud to offer real high quality Japanese wild game cuisine.
Miyama local chicken “Kyo Jidori”is hybrid of the well-known Nagoya cochin and barred plymouth rock crossed with gamecook, producing crunchy and tasty natural chicken meat. Kyo Jidori is raised in open space breeding for 120 days, produced only 500 per month.
Thin sliced Kyo Jidori and eggs from chickens in open space breeding will be served for Sukiyaki hot pot dinner.
Variety of seasonal ingredients such as mountain vegetables (taranome, kogomi, young bamboo shoots, etc.) and amago trouts in spring; ayu sweetfish from pristine water of Yura river in summer; matsutake mashroom in autumn in addition to local wild game and fresh vegetables.

Ayu, which is translated “sweetfish” because of its unique flavor said to resemble watermelon, is a summer delicacy. Natural ayu sweetfish grown in clean water Miyama river had been awarded the second prize in the National Ayu Competition.
Luxurious course to enjoy once a year local delicacy includes salt-grilled ayu, ayu tempura, segoshi (sliced raw ayu), ayu cooked with rice, ayu sushi etc.
